Fattoria San Fabiano Borghoni Baldovinetti is located in Arezzo, Tuscany. Chianti DOCG red wines are made.

Owner: Conte Borghini Baldovinetti de Bacci. His ancestors commissioned Francesco Redi to do frescoes. His mother is from the Colli Aretini and the other side of his family is from Florence. His son is Averaldo (32 in 2005).

History: The tower dates from the 12th-century.

Estate vineyards: Over 850ha of land, mainly hilly land between 250–450 masl. There are three estates across 150 hectares of vineyards. Two are in Arezzo and one in is in Montepulciano in Acquaviva. San Fabiano is at 300 metres and the other vineyard site is at 350-400 metre. They ripen about ten days apart.

Estate vineyards–San Fabiano This is where the wines from all the Count’s holdings are vinified. There is also a wine tasting room and retail point called La Cantinetta. The San Fabiano vineyard comprises ha of Chianti DOCG and Vinsanto del Chianti DOC. 250 metres. Grapes: Sangiovese, Canaiolo, Cabernet Sauvignon, Merlot, Chardonnay and Viognier.

 Estate vineyards–Campriano: Located near the Casentino valley, the estate produces the best grapes used for the cru wine, “Armaiolo”. 300-450 metres. 20ha of vines: Sangiovese, Cabernet Sauvignon and Petit Verdot.

Estate vineyards–Poggio Uliveto: Located in Montepulciano near Siena, the estate produces Vino Nobile of Montepulciano and Chianti.. 20ha of vines: Sangiovese (Prugnolo Gentile) & Merlot.

Viticulture: Horse and cow manure form animals on the farm and also bought in. Cordon for all vines. Old vines at 3m x 1.30m; new one at 2.5 x 0.85. Viognier cones from Rauscedo.

Organic certification: 1989 First trials with organics from 1989. | 1992: Certified organics for the first time. | 2009: 200ha of land with organic certification. | 2010: Organics was dropped ‘for reasons of cost and quality’.

White wines

Chiaro di San Fabiano: 2003 Trebbiano Toscano, Chardonnay.

Red wines

Vino Nobile di Montepulciano DOCG, Tenuta di Poggio Uliveto2002 Over-ripe nose and stewy on the palate and a bit sour in the finish and lacks typicity (tasted at the consorzio Tuesday 8th March 2005. 2008. Prugnolo Gentile 90%, Canaiolo 5%, Merlot 5%. Annual production 50,000 bottles. Estate founded in 2000. Oenologist: Maurizio Alongi. Medium deep ruby with rim showing already some orange. Soft, almost jammy with hints of dried fruit. Soft, ripe fruit, without enormous depth, but with persistent powdery tannins. Good balance, but I’m uncertain about its lifespan,” (Speller, W: 03 Mar 2011).

Chianti DOCG, Fattoria San Fabiano Borghoni Baldovinetti2003 Sangiovese, Montepulciano, Canaiolo. Unoaked. Soft fruit, slightly dry tannin, a bit sour, and light too (Visit 2005). | 2004: Unoaked; wants a young fresh wine to drink. Again a bit light and sour (Visit 2005).

Toscana Rosso, Piocaia: Piocaia is the name of a podere. 2003 Merlot, Sangiovese, Cabernet Sauvignon. Quite dense in style; better, cleaner style than the Chianti DOCG (Visit 2005). | 2010 60% Sangiovese, 40% other. £15-29.99. Roasted nose on the first bottle and the second was Porty and not as good No medal at DWWA 29th April 2013).

Armaiolo: The flagship red. 40,000-50,000 bottles. 2003 Dry tannin, over-ripe (Visit 2005).

Other activities: Extra virgin olive oil. Have their own continuous cold press (Alfa Laval).
