ELBA ALEATICO PASSITO or ALEATICO D’ELBA PASSITO DOCG is a sweet, dried-grape red wine made from Aleatico grown on the Italian island of Elba. See Elba DOC.

For the passito wines the grapes are left to dry on straw mats. The drying process (‘appassimento’) takes around 10 days normally. The grapes raisin. Aleatico is normally fermented on the skins for about a week, while Moscato and Ansonica are pressed immediately after drying. Aleatico and Moscato are sold as vini liquorosi or fortified wines, usually with grapes from southern Italy
