Colombaio di Cencio is an estate winery in Localita Cornia in Gaiole-in-Chianti in the Chianti Classico DOCG region of Tuscany, Italy. As well as Chianti Classico DOCG red wines a Vin Santo del Chianti Classico DOC is also made.

Owner: Werner Wilhelm, a native of Bavaria who, after various other commercial enterprises decided to concentrate on wine-growing. He bought one estate, then added another two called Cornia and Monticello. His first vintage was 1995.

Staff: Manager: Jacopo Morganti (in the early 2000s). Consultant oenologist: Paolo Vagaggini.

Vineyards: 4,000ha of land. Initially I think there were 17 hectares of land of which 7 hectares were vines. In 2013 the website said there were 23 hectares of vineyards, of which 16ha have recently been planted in Cornia and Monticello to cordon and at a density of 6,950 vines per hectare. Around 400 metres.

Winery: State-of-the-art. Barriques and 50hl tonneaux.

White wines

Toscana Bianco IGT, Masso Bianco2018 50% Malvasia and Trebbiano Toscano.

Toscana Bianco IGT, Sassobianco: Chardonnay, Sauvignon and Malvasia. Dry. Steel.

Red wines

Chianti Classico DOCG, Monticello2017 100% Sangiovese.

Chianti Classico DOCG Riserva, Massi del Colombaio: Sangiovese and Merlot aged in oak casks for 24 months.

Chianti Classico DOCG Gran Selezione, Colombaio del Cencio: 2015 100% Sangiovese.

Toscana Rosso IGT, Futuro: The top wine. 33% Sangiovese, 33% Cabernet Sauvignon, 33% Merlot, 1% Petit Verdot. Aged in oak casks for 24 months.

Toscana Rosso IGT, Monticello: Sangiovese, Cabernet and Merlot grapes, aged in oak casks for 15 months.

Dried grape wines

Vin Santo del Chianti Classico DOC: 2010 80% Sangiovese, 20% Trebbiano and Malvasia del Chianti.
