Salice Salentino DOC is a denomination in the Salento peninsula in the Puglia region of south-east Italy. The red version is made from the Negroamaro grape, which can be blended with other grapes, such as Malvasia Nera. ‘In Salice Salentino the Negro Amaro variety can be made in a plethora of still, sparkling and fortified styles,’ Ole Udsen told me (14th June 2015). The white Salice Salentino Bianco DOC is based on Chardonnay.
