Phoenix is a white wine grape variety, an interspecific hybrid bred for its resistance to fungal disease organisms (see PIWIs). Martin Fowke told me ‘Phoenix shows some Bacchus-like flavours and aromas, of nettle, hedgerow, and elderflower, which are the classic flavours for wine in the UK. In the UK it produces lower yields and higher sugars compared to Seyval Blanc.’
