Perruches is a soil type described by Tom Stevenson (Sotheby’s Wine Encyclopedia 5th Edition, 2011) as ‘very stony, flinty clays combined with silica, perruches soils warm up quickly and are said to be why Sauvignon Blanc grown on them have a flinty taste.’
