La Chablisienne is a wine cooperative located in Chablis, in the department of Yonne, France. It is the main wine producer in the department, supplying more than 25% of the volume of Chablis production. It was founded in 1923 by Abbé Balitrand. Until the 1950s growers would deliver their wines (rather than grapes) which were then blended ready for sale, typically to wholesalers. Subsequently, growers delivered unfermented must, allowing more creative winemaking control.
