JNK is a winery in the Sempas region of Slovenia. Ivan Mervic, locally nicknamed ‘Jnk’ (pronounced Y-uh-nk), began planting terraced vineyards in Sempas, an amphitheatre-like valley between the Adriatic sea and the mountains, in the 1890s.
Owners: Boleslav & Kristina Mervič. Fourth generation.
Winemaking: Long skin maceration (5 to 14 days for the whites, 40 days for the reds) and extended barrel ageing (1 to 2 years).
