Colle Santa Mustiola is an estate in Chiusi in the southern part of Siena Province in Tuscany, Italy.

Owner: Fabio Cenni (b.1954). Washed his first oak vat aged 6 as his grandfather put him inside one and told him to clean it. He was a doctor. From his nonno (Amerigo Scaramelli; he was the father of his mother) – he sold his wine in Milan, 1912 got a medal in Bordeaux.

Vineyards: 5 hectares under vines (10,000 vines), mainly Sangiovese (1% of Colorino). In 1990 Fabio planted new Sangiovese vineyards for which he used the estate’s viticultural material, reproducing the best Sangiovese plants (biotypes) present in the old vineyards. He replanted in 1990 with 28 biotypes, of which 4 pre-phylloxera biotypes (from alberello vines planted at 20,000 vines per hectare). Pruning is spurred cordon.

Terroir: Northeast facing. 300 metres. Hilly zone. Alluvial soil, Pliocene era sand over marine sediments, former seabed. Sand, pebbles and (grey) clay allow excellent water retention.Very diverse. Soils drain quickly. The climatic conditions are optimal with summers with significant temperature variations influenced considerably by the proximity of Lake Chiusi.

Viticulture: . Fertility: Stallatico 30-35q/ha.

Winery: The ageing cellar is underground. The entrance is an Etruscan tomb, so totally underground.

Winemaking: Veronelli school.

Pink wines

Kernos Rosato: Kernos is the Etruscan term for a vase, used for drinking outside of meal times. Chiusi was the capital of Etruria. 100% Sangiovese. Fermented in stainless steel. Fabio Cenni’s grandfather used to make this style of wine for summer–and would have a glass of it for breakfast. Grapes picked early morning, added ice, free run was fermented, on lees, bottled in spring. Steel. Cryo-extraction. 30 year old vines. Gets late dew. 3 clones of Sangiovese in this. Verso il lago di Chiusi, get cool nights. So get dew quite late into the morning. On a hill (poggio). | 2013 13.5%. 2,600 bottles. Very savoury. Lovely depth and freshness. Sapid too, really savoury, lovely concentration at Il Marroneto on 13th January 2015.

Vigna Flavia, IGT Toscana: 97% Sangiovese 3% Colorino. Vineyard area: 2 hectares. Exposure: North-East. Altitude: hilly area at 300 meters above sea level. ca. Soil type: alluvial soil with Pliocene sand. Harvest period: second ten days of October. Vinification: 35 days of maceration of which 20 with submerged cap and spontaneous malolactic fermentation. Aging: 24 months in 20/30 hl Slavonian oak barrels. Subsequent aging in bottle for 12 months. | 2009 36m in Slavonian oak. Nice limpid colour with maturity, seems bright. Delicate nose. Sweet fruit, bit of funk in this too but lovely weight and lift this this, not at all heavy very savoury and intense without being heavy. Interesting stuff. Savoury. €12. Quite Burgundian to me at Il Marroneto on 13th January 2015.

Red wines

Poggio ai Chiari Rosso: The top wine. From Chiusi. From 4ha of 100% Sangiovese from all the 28 clones. Nord – Est. Zona collinare a 300 metri s.l.m. ca. Aged 36 months in barrel and Slavonian oak botti (20hl). | 2006 14.3%. 5 years in wood (new and old), French 1,000 l and Slav 20-30hl. Very good fruit for a wine with so much time in wood. Sweet fruit and savoury tannin, quite Brunello like at Il Marroneto on 13th January 2015.
