WHITE WINES

SERRAGGHIA BIANCO, ZIBBIBO | 2012 Moscato Bianco. Dry. No added sulfites. 7 months on skins in amphora which are buried outside. Cloudy, leesy. Lovely acidity but very eggy-tasting end at RAW 2015.

PINK WINES

SERRAGGHIA ROSATO, FANINO | A blend of Pignatello and Cataratto, inspired by the peasant farmers (‘contadini’) of Pantelleria who would blend red and white grapes to make a more refreshing drink.

RED WINES

SERRAGGHIA ROSSO, FANINO | 2012 From Pinot Noir. No added sulfites (Source: catalogue for RAW, London 17/18 May 2015). Very funky, eggy and bretty eggy end at RAW 2015.

OTHER CROPS

Capers marinated in ‘sel de guérande’. Anchovy extract (‘colatura di alice di Serragghia’) inspired by the ‘garum’ of ancient Rome, which is not a sauce but a transparent, golden coloured liquid, made from ‘sel de guérande’ and extract of Mediterranean anchovies. Oregano from the slopes of the Jibele volcano picked pre-flowering, and dried in windy shade.
