Samuele Calistri is is from Caprarola in Viterbo province (near Rome), where his family has owned a restaurant, the Trattoria del Cimino da Colombo, for four generations. Samuele is a man of many talents. He is a Sake Sommelier (as well as being a wine one), and also played professsional soccer, for his local Viterbese team in the second division (Serie C2) of Italy’s professional league. He was a tall, skinny centre back or right-sided defender. He was only 18, too (he was born in 1990). When Viterbese had financial issues Samuele had to move to another team, Monterosi, which won their league championship and were promoted to Italy’s professional league. Realizing there was no future in soccer, Samuele started working in his father’s restaurant, then moved to the Michelin starred Enoteca La Torre a Villa Letitiae in Viterbo (it has since move to Rome). In March 2014 he started working as a Sommelier at the Four Seasons Hotel des Bergues in Geneva, Switzerland.
