Saint-Bris AOC is a dry white wine from Sauvignon Blanc grown in five communes near Chablis (whose own dry whites are 100% Chardonnay). St Bris gained VDQS status in 1974. From the 2001 vintage it became an AOC.

Terroir: Most of the vines are found on limestone plateaux (Guide Hachette des Vins 2004, p.462).

Winemaking: Unlike in the Loire valley, here the Sauvignon Blanc often goes through malolactic fermentation (Guide Hachette des Vins 2004, p.462).
