Passito or Vino PassitoItalian term for IGT, DOC and DOCG wines obtained from the fermentation of grapes through natural drying or in a controlled environment. These sweet wines are generally made from air-dried grapes. A fortified (‘liquoroso’ in Italian) version of this category also exists and the Vino Passito Liquoroso qualification therefore means a fortified sweet wine, a qualification attributed only to IGT wines.
