Vineyards | Doug Wregg says the estate lies ‘a few kilometres from San Gimignano and comprises 250 acres of woodland in the Castelvecchio nature reserve. Mattia and his artist wife Cassandra have also turned the estate into a guest house: Il Caggio.’ There are also domestic and farm animals: Cinta Senese pigs which provide ham and salami which they sell in their farm shop, and also a little-known breed of sheep called Camerun,’ (Les Caves de Pyrène list, July 2011).
Certification | 2009 Mattia started organic certification (ICEA) but by 2011 he had stopped bothering with the paperwork, but continued to farm in the same way.
Vineyards | Mattia started making wine in 2007. In 2013 he said he had 3.5ha of Vernaccia, and 1ha of Sangiovese in Mormoraia.
Winemaking | Hand picked.
Vernaccia di San Gimignano DOCG, Impronta | Impronta = “Imprint”. ‘Impronta is hand harvested in small crates. Refrigeration for 12-18 hours at controlled temperature then gently pressed. The alcoholic fermentation takes place in stainless steel tanks at controlled temperature of 16-18 °C. The wine is aged on its own lees with frequent batonnage for five to six months. Mattia explains that the name expresses the importance he attaches to Vernaccia, and is therefore his ‘signature’ wine (he is an ardent fan of this grape variety). He comments that this particular style of Vernaccia is the style that he would like to act as an introduction to uninitiated wine drinkers in order for them to discover the qualities and pleasures of the Vernaccia grape: ie. its floral aromas enhanced by notes of citrus fruit, and its freshness and its saltiness, a feature imparted by his red-coloured limestone clay soil, all of which contribute to the fact that Vernaccia is an easy-to-drink white wine. This is Vernaccia that you want with seafood: salty, creamy, nutty, tangy with that typical dry restraint. It has the crunch of iceberg lettuce and is as cool as the other side of your pillow,” (Les Caves de Pyrène list, July 2011).
