Le Cimate is an estate winery in Montefalco in the Montefalco region of Umbria, Italy. It produces white wines under the Spoleto Trebbiano Spoletino DOC and red wines under the Montefalco Rosso DOC, Montefalco Sagrantino DOCG, and Montefalco Sagrantino Passito DOCG.
The name: Le Cimate means ‘top of the hill’.
Owners: Paolo Bartoloni & family. Paolo Bartolini’s grandfather, also called Paolo was for many years President of the local co-operative winery. It was he who bought the land in 1992. In 1994 the first vines were planted. Paolo’s son was Giovanni and in turn Giovanni’s son is Paolo Bartoloni.
Vineyards: 23 hectares (57 acres) of vines of which 4.5 hectares (11.1 acres) of Trebbiano Spoletino. Located in the Casale zone, at 400 metres. Cool, surrounded by the Martani hills.
Spoleto Trebbiano Spoletino DOC: Vines are caned pruned (guyot). | 2016 Aim for a yield of 7 tonnes per hectare. Hand picked. Dry ice added to chill the grapes in the press. 12 hours on the skins. 20% to barrel, 80% to steel. Earthy grassy with nice texture (Collisioni 2017). | 2017 Spring frost. 60% of crop lost. 100% stainless steel. 13.5%. Peachy fruit, yellow colour (Anteprima 2019).
Spoleto Trebbiano Spoletino Superiore DOC, Riserva del Cavalieri Bartolomi: 100% Trebbiano Spoletino.
Umbria Bianco, Arargon: 100% Vermentino.
Vigna Fante: 50% Chardonnay, 30% Grechetto, 20% Viognier.
Saudade: 100% Sagrantino.
Montefalco Rosso DOC: 2015 14%. Plump and a bit green (Anteprima 2019).
Montefalco Sagrantino DOCG: 2012 Aged in four different types of wood. Juicy fruit and oak (Collisioni 2017). He used larger sized oak this year to stop the wine becoming too heavy. | 2015 A bit dry-tasting, lacking enough obvious fruit (Anteprima 2019).
Montefalco Sagrantino DOCG Passito: 100% Sagrantino.
Vignafante: Umbria Rosso. 70% Sangiovese, 30% Merlot.
Macchieto Super Umbrian: 50% each Sagrantino and Cabernet Sauvignon.
