IL CAVALLINO DI SAURO MAULE, estate winery near Vicenza, in the Colli Berici DOC (Berici hills) of the Veneto region of north-east Italy. Il Cavallino was founded originally as a beef cattle breeding farm by Lino Maule, Sauro’s father (who was also a lover of horses, hence the name, ‘cavallo’ being the Italian term for horse.).
VINEYARDS / 5ha. Sauro replaced pergola trained vines which had been conventionally farmed with organic vines which were cane pruned (guyot).
GRANSELVA | A blend of Garganega, Durella, Pinot Grigio and Chardonnay. Fermented and aged 100% stainless steel. / 2012 ‘Lemon-grass, capsicum, bitter almonds,’ (Isabelle Legeron, 2014, p153).
PRI | 100% Garganega. Fermented and aged 100% stainless steel.
ROSSO CA’LOMBARDA | Merlot.
