Eiswein is a quality category in the Pradikat system in Germany and means ‘ice wine’. The grapes will not be affected by botrytis. The wines will have a minimum must weight of 110–128° Oechsle. The grapes are left on the vines and during very cold weather the water in the grapes will freeze, but the acidity and the sugar remain unfrozen. The sweet, acidic juice is then fermented into wine. The wines are sweet, luscious and long lived.
