Vin Santo di Carmignano DOC is a sweet dried grape wine made from the same production zone and under the same rules authorised as Barco Reale di Carmignano DOC in Tuscany but from 75-100% Trebbiano Toscano and/or Malvasia Bianca on their own or in any combination, plus 0-25% any other white grape varieties authorised in Tuscany. The grapes must be pressed between 1st December and 31st March following the harvest. The juice must ferment in wooden casks no bigger than 300-litres. The wine can be sold from 1st November in the third year after harvest, or in the fourth year for Riserva. The wine must have a minimum potential alcohol of 16%, and a minimum actual alcohol level of 14%. The maximum level of volatile acidity is 1.8g/l. The minimum level of dry extract is 21g/l. The reserve version is called Vin Santo di Carmignano Riserva DOC.
