Terrasses du Larzac AOC  is a red wine only denomination comprising a minimum of three of the five Languedoc varieties: Grenache Noir, Mourvèdre, Syrah, Carignan, and Cinsault. The first four of those varieties must represent at least 75% of a qualifying vineyard. Yields must not exceed 45hl/ha.

‘The required blend of Languedoc grape varieties is dominated by Grenache Noir, Syrah, and Mourvèdre with, possibly, some Cinsaut and Carignan,’ (OCW: 2015, p.737).

The nameThe Terrasses du Larzac name was coined by Olivier Jullien of Mas Jullien.

Terroir: Situated north west of Montpellier in the northern part of the Languedoc, the Terrasses du Larzac vineyards are heavily influenced by the cool air from the high Larzac plateau, symbolized by Mount Baudile which peaks at 850 metres (2,800 feet). Geographically, it is pretty unique, with day/night temperature variations occasionally as wide as 20°C (68°F) in summer. This means the grapes mature slowly and steadily, resulting in the wines’ freshness and aromatic complexity.
