CAVIT, or Cantina Viticoltori del Trentino (Trentino Grape Growers’s Cellar) is a cooperative group which comprises ten winemaking cellars across Trentino supplied by 4,500 associated grape growers.

HISTORY | Cavit’s history starts in 1950, when some vine-growers entered into partnership, establishing a Consortium of associated grape growers, a first draft of Cavit. The Consortium was born to help the associated wine cellars and promote the “culture” of quality wine throughout the region, supporting the vine-growers throughout each phase. In 1957, the technical function was joined by the commercial function: the Consortium acquired a cellar for the increasing needs of its associates. In 1964, today’s premises of Ravina di Trento was built, and then expanded starting in 1977 until it reached its 80,000 mertres squared of today. Since then, Cavit has become the reference point for Trentino’s wine production.

SUSTAINABILITY CERTIFICATIONS | Cavit has obtained and renewed over time the UNI EN ISO 9001:2008 certification. Further international certificates are the BRC (Global Standard for Food Safety – British Retail Consortium) and IFS (International Food Standards). In 2009, it obtained the UNI EN ISO 14001:2004 certification according to the international regulation for Environmental Management Systems. In July 2014 Cavit has obtained the OHSAS 18001 standard quality certification and the Certificate of Excellence that Certiquality awards to a selection of businesses who have demonstrated responsible voluntary commitment in their company governance by having attained all three certifications. For over twenty years, Cavit has adhered to the “Protocol for quality wine production in Trentino”, within a completely sustainable agriculture.

ENERGY CONSUMPTION | A further aspect in which the company has invested over the years is the reduction in energy and water consumption. With the aim of reducing CO2 emissions from electricity consumption in its various productive activities, Cavit has realised three important solar panels that, generating over 800 Mwh per year, allow the company to cover its entire energy needs through renewable sources.

PICA | Since 2010, Cavit has been developing the PICA project (Integrated Agricultural and Grape Growing Mapping Platform), a study in collaboration with MPA Solutions and Trentino’s best research centres Edmund Mach Foundation (FEM) and Bruno Kessler Foundation (FBK), divided onto two levels. The first defines the choice of the best grape varieties based on the technical-environmental parameters of the territory; the second level provides for the implementation of an avant-garde system to allow the cellar agronomists and oenologists to receive specific information about each growing area and each vineyard management operation. The project aims to direct the vine-grower and the “environment-landscape-territory” management towards total sustainability, which takes into due consideration the ecological, social and economic aspects.

WATER | Cavit is developing an innovative technological system able to ration the water needed by the cultivations in virtue of the specific needs of the territory and the weather conditions, therefore eliminating waste.

VISITS | Cavit’s representative site is Maso Toresella, on Lake Toblino: an ancient and enchanting villa surrounded by vineyards. Founded in the 1500s by the Prince-Bishops of Trento, it extends over 6.5 hectares in one of the most enchanting places of Trentino. Here, Cavit and the San Michele all’Adige Oenological Institute (Edmund Mach Foundation) have founded a centre of advanced experimentation, which brought forth the first draft of “Il Maso”, a wine and oenological project aimed at creating products of extremely high quality such as the real “cru” wines in the “I Masi trentini” range.
